GT Xpress 101 Recipes  Brownies(from a boxed mix)

Yes! You can make brownies using the Gt Xpress 101 Redi Set Go Cooker and they are delicious.  I used a boxed mix, Betty Crocker Original Supreme.  I did make it cake-like using three eggs instead of two, just to make sure it cooked inside.  You do still get the chewiness, because the edges are on each brownie, using the mini muffin pan.  Just remember to spray well each time(cooking spray) and remove very gently( I use a plastic-like spoon).  The time it takes to cook thoroughly is generally about 10 minutes, of course checking each time for doneness.  I check by inserting a knife and seeing  if it comes out clean.

GT Xpress 101 Recipes: Chocolate cake from a box mix  heart shape little cakes

The time it took to cook the heart shaped cakes in the Redi Set Go Xpress cooker is about 8-10 minutes.  I can’t say how i love that you can have cake in as little time as 10 minutes, it’s perfect for those chocolate craving that come on all of a sudden.  If you know what I mean.  The cake cooks up great, I don’t even need any frosting.  Although my two kids loved it with frosting and sprinkles.  That explains the picture.  All around it was just yummy, and all tummies were satiated.



GT Xpress Recipes - Pizza Sandwhich

Gt xpress 101 Recipes Grilled Cheese Pizza Sandwich Recipe

  • 4 Slices of toasted bread
  • 2 slices your choice of cheese
  • Pepperoni
  • Pizza Sauce( 1 T. each sandwich)
  1. Spray and heat up the GT  Xpress cooker.
  2. Butter the slices of toast and put sandwich together, butter on the outside.
  3. Put a little sauce on each slice , add cheese and pepperoni slices.
  4. Grill for 3- 5 minutes or just until cheese melt.

Makes 2 servings

Notes: My kids love pizza, so this was a great recipe variation and so easy and fast



GT Xpress 101 Recipe - Salsa Omelet

GT Xpress 101 Recipe Easy Salsa  Omelet

  • 3 eggs, lightly beaten
  • jar of salsa (i used chunky, 2 heaping tablespoons each, plus topping)
  • shredded cheese(about a cup)
  1. Using divider pan, preheat pan in cooker and grease.
  2. Add 1/2 beaten eggs mixture in each well.
  3. Spoon in salsa , about a heaping tablespoon in each. (spreading evenly to get salsa in every bite)
  4. Cook for 10 minutes, checking for doneness with a knife.
  5. In the last minutes, open and add shredded cheese to melt(1/2 cup each).
  6. When done, add more salsa on top if desired.

Note:  My husband and I ate this for breakfast .  It was so easy, fast and delicious.  Just always keep salsa in the fridge and you’ll always have a nice breakfast or snack just minutes away.

Mini Tater Egg Tot Recipe

  • 6 tater tots, thawed
  • 1 egg, beaten
  1. Spray mini-food pan with cooking spray and preheat in your Xpress Redi Set go.
  2. Place a tater tot in each mini-well and add  beaten egg mixture to each.
  3. Cook for 5 minutes.

Notes:  My kids just devoured this little treat.  This is the ony way my son would even eat eggs.  Easy for on the go breakfast for those rushing out the door.  I think I’ll make this for the car on the way to school.  A quick and healthy finger food that kids will love,  my kids surely do.



Heart Shaped Sausage Pancake Recipe

  • Pancake batter
  • Sausage sliced
  1. Preheat pan  and spray with cooking spray.
  2. Fill heart shaped pan with sausage first.
  3. Add pancake batter.
  4. Cook 7 minutes.

Notes:  My kids thought they were at a fancy restaurant.  These also were so easy and fancy looking,  good enough for guests.  I’ve never seen them eat so much pancakes.  I think we really do eat with our senses first.  My daughter loved the hearts!  Amazingly,  pancakes do well in the Redi-set- go Cooker.  They fluff up and become soft and light.

Easy Pizza Dough for the GT Xpress 101

  • 2 cups warm water
  • 4 cups all purpose flour
  • 1 envelope yeast(2 1/2 teaspoon)
  • 1 t. salt

1.  Place warm water, yeast and salt in mixing bowl and stir.
2.  Add flour and mix until combined, forming a ball.
3.  Cover and let rest for 2 hours.
4.  After 2 hours, dough is ready.
5.  Dumping mixture onto floured surface turn to coat with flour.
6.  Divide dough into 10 sections.
7.  Store extra dough not used in a closed ziploc on a plate for up to 2 weeks.
8.  To use, flatten ball, stretch and lay in gt xpress adding toppings as  desired.

  • 1 Easy pizza dough(recipe above)
  • 1 T. pizza sauce
  • 6 Slices of pepperoni
  • 3 T. Shredded Mozzarella Cheese

1.  Spray your xpress grill with cooking spray and preheat.
2.  When ready, place dough in grill and add toppings, pizza sauce
mozzarella cheese and pepperoni slices.
3.  Close and cook for 8-9 minutes.

1.  Spray your xpress grill with cooking spray and preheat.
2.  When ready, place dough in grill and add toppings, pizza sauce,
mozzarella cheese, pepperoni, onions and green peppers.
3.  Close and cook for 8-9 minutes.

Notes:  I cannot say enough about how good the pizzas come out.  My family loves pizza night.

GT Xpress 101 Recipe - Pepperoni Pizza
Gt Xpress 101 Recipes Cheese Quesadillas

  • Whole Wheat flour Tortillas
  • Refried Beans
  • Cheddar Cheese
  • Chopped onion
  • Chopped Tomato
  1. Spray and heat up your GT Xpress cooker.
  2. Cut tortilla in half and spread a layer of refried beans, cheese, tomato and onions on half of the half.
  3. Fold over tortilla and put in cooker to grill slightly and melt cheese 3-5 min.

Makes 1 serving

Notes: This was my lunch, I made it with leftovers after we had tacos the night before.  That’s what I like about the GT Xpress Cooker, leftovers are not boring leftovers, they are simply revived and made into new meals.

GT Xpress 101 Recipes Turkey Reuben Panini

  • 2 thick slices of bread (Rye)
  • 1/4c. thousand island dressing
  • 2 slices of swiss cheese
  • 1/4c. sauerkraut, rinsed and drained
  • 8 oz. deli turkey breast
  1. Heat up GT Xpress 101 grill and coat with nonstick cooking spray.
  2. Spread thousand island dressing on bread slices.
  3. Add sauerkraut, swiss cheese and turkey.
  4. Coat each slice on the outside of sandwich with cooking spray and put in grill
  5. Cook 2 minutes on each side or until browned and cheese melts.
Gt Xpress 101 Recipes Stuffed Soup
  • 1 can (18.8 ounces) prepared chicken and corn chowder
  • 2 1/2 cups chicken-flavored dry stuffing mix
  • 3 ounces shredded cheddar cheese
  1. Combine all ingredients. Heat up Gt xpress 101 and spray with nonstick spray.
  2. Spoon 3/4 cup of mixture into each well.
  3. Cook 7 minutes, or until golden brown.
  4. Repeat and cook the remaining two servings. Serves 4.
Gt Xpress 101 Recipes Melted Cheese and Tomato Sandwiches
  • 4 slices Italian bread
  • 4 slices cheese
  • 2 to 4 thin slices tomatoes
  • 2 teaspoons pesto, mayonnaise or your favorite sandwich spread
  • nonstick cooking spray
  1. Heat up and spray your gt xpress 101 with non stick spray
  2. Spread each slice of bread with mayo or chosen condiment.
  3. Place cheese and tomatoes on bread.
  4. Top with second slice of bread.
  5. Place sandwich in grill.
  6. Cook 4 to 5 minutes or until bread is toasted.
  7. Allow the sandwiches to cool for a few minutes before serving as filling will be very hot.

Serves 2

Gt xpress 101 recipes Grilled Meatloaf Sandwich
  • 4 slices French bread, about 1/2 inch thick
  • leftover meatloaf, sliced
  • 2 slices cheese, optional
  • butter
  1. Heat up Gt Xpress 101 and spray with non-stick cooking spray.
  2. Assemble two sandwiches with meatloaf and cheese, if desired.
  3. Spread butter on the outside of sandwiches.
  4. Place sandwich in xpress cooker.
  5. Cook 4 to 6 minutes.
Gt Xpress 101 recipes Tortillas and Eggs
  • 3 eggs
  • 1 Tablespoon milk
  • 1/2 cup shredded cheese (cheddar, Colby, Monterey Jack)
  • 2 Tablespoons crumbled cooked sausage or diced ham
  • 6 large or 4 medium tortilla chips, crushed
  1. Place half the crushed tortilla chips in each well.
  2. Pour eggs beaten with milk over the top of chips, dividing equally between wells.
  3. Top with meat and cheese.
  4. Cook 10 minutes. Serves 2.
Fried Eggs
  • nonstick cooking spray or 1/4 teaspoon butter or margarine
  1. Spray wells of divider pan with vegetable oil spray. Carefully crack an egg in each well.
  2. Cook 2 to 3 minutes to desired doneness. Serves 1 to 2.
Poached Eggs
  • nonstick cooking spray
  • 2 eggs
  • water
  1. Spray wells of divider pan lightly with nonstick cooking spray.
  2. Pour about half the water into each well.
  3. Allow water come to a boil, about 2 minutes.
  4. Carefully crack an egg into each well.
  5. Cook 2 to 3 minutes to desired doneness. Serves 1 to 2.

Gt Xpress 101 Recipe Mixed Berry Corn Pancakes

  • 1 pkg.(8.5 ounces) corn muffin mix
  • 1 egg
  • 2 Tablespoons melted butter or corn oil
  • 1/2 c.  milk
  • 1/2 c.  mixed berries (blueberries, raspberries, etc.)

1.  Combine muffin mix, butter, egg and milk. Stir in berries. Add
3/4 cup of the mixture to each well of xpress cooker pan.
2.  Cook 7  minutes or until well browned and inserted toothpick comes out clean.
3.  Serve with blueberries, raspberries or maple syrup. Serves 3.

Xpress Cooker Breakfast Pigs-in-a-Blanket

  • 8 brown ‘n serve sausages or any sausage you prefer
  • 1 package (6 ounces) complete pancake mix
  • 1 cup water

1.  Place sausages in each well of xpress cooker divider pan.
2.  Cook 2 to 3 minutes.
3.  Mix batter and water in bowl or shaker. Place 1/4 cup batter in each well over sausages.

4.  Cook 7 minutes.  Serve warm with butter and syrup. Serves 4.

Gt Xpress 101 Recipe French Toast and Ham Wrap Recipe

  • 1 egg, lightly beaten
  • 1/4 cup milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla
  • 2 large slices of cinnamon or raisin bread
  • 2 slices ham
  • nonstick cooking spray

Combine the egg, milk, cinnamon and vanilla in a shallow bowl.
Soak the bread slices in the mixture and allow the bread to soak up
the liquid. Spray the wells with nonstick cooking spray. Place 1 slice
of ham on each slice of bread and fold lengthwise to enclose the
ham and place one in each well.
Cook 5 minutes in the GT Express 101, until the bread is nicely brown. Serves 2.

Gt Xpress 101 recipes Mini Muffins

  • 1 pouch (6.4 to 6.5 ounces) or one small box (7 to 8.5 ounces) any

type muffin mix

1.  Preheat gt xpresss cooker and spray pan with cooking spray.
2.  Mix muffin mix according to package directions. Divide batter
between wells using mini muffin pan.
3.  Cook 7  minutes or until toothpick comes out clean.

Notes: I made mini muffin many times.  The instant mixes are easy and what’s better than a freshed baked muffin with your coffee.  The longest it will take is 10 minutes from mixing to yummy in your mouth.  My favorite is the blueberry muffins made into hearts.

Breakfast “On-the-Go” Burritos

  • 2 (8-inch) flour tortillas
  • 3 brown ‘n serve sausages, thinly sliced
  • 2 eggs, beaten with 2 Tablespoons milk and salt and pepper to taste
  • 2 slices American cheese

Place half the sausage slices in each well
Cook 2 to 3 minutes.Divide beaten egg, milk and seasonings between 2 cooking wells. Cook 2 minutes.
Stir slightly to scramble and cook 2 more minutes.
Meanwhile, place one cheese slice in the center of each tortilla. Top
each with half the cooked egg and sausage mixture. Rub a small
amount of water along the perimeter of each tortilla to seal. Fold
each tortilla in half and place one in each cooking well.
Cook 4 minutes and wrap in a napkin to serve. Serves 2.

Sloppy Joe and Egg Breakfast Pie for the GT Xpress 101 Cooker

  • 1/2 (9-inch) refrigerator pie crust, cut in 2 pieces
  • 1/2 cup cooked or canned sloppy Joes
  • 2 eggs
  • 2 Tablespoons salsa
  • 2 Tablespoons shredded cheddar cheese
  • 2 Tablespoon shredded Monterey jack

Carefully fit one piece of pie crust into each well. Cook 2 minutes.
Spoon 1/2 the meat mixture into the crust leaving room in the center
for the egg. Carefully crack an egg into each shell.
Cook 6 to 7 minutes, to desired doneness. Remove spoon salsa
over each egg and top with the cheeses. Serves 2.

Easiet Cinnamon Rolls
1 can (12.4 ounces) refrigerated cinnamon rolls
nonstick cooking spray
Spray bottom and top of cooking well with nonstick cooking spray. Place 2 cinnamon
rolls in each side of divider pan.
Cook 5-7  minutes. Repeat with remaining rolls or refrigerate for 24
hours. Frost and serve. Serves 8.

Biscuit Breakfast Bake

  • 2 large or 4 small refrigerator biscuits
  • 2 whole eggs
  • 1 slice American cheese, cut in half
  • 2 slices pre-cooked bacon, cut in half

1. Press 1 large or 2 small biscuits together to form a 6-inch oval. Repeat
with remaining biscuit or biscuits. Carefully fit one oval into each well of xpress cooker.
Crack an egg, onto each biscuit and top each with half the cheese and
half the bacon.
2.  Cook 7 minutes. Serves 2.

Scrambled Biscuit Breakfast Bake – substitute beaten egg for whole egg.
Canadian Biscuit Breakfast Bake – substitute 2 slices Canadian bacon
or the bacon.
Ham Biscuit Breakfast Bake – substitute 2 slices ham for the bacon.
Sausage Biscuit Breakfast Bake – substitute 4 pre-cooked breakfast
sausages for the bacon.
Low-Cholesterol Biscuit Breakfast Bake – substitute 1/2 cup egg
substitute for the eggs, reduced-fat cheese

GT Xpress 101 Egg Breakfast Recipes

  • 2 eggs, beaten
  • 2 large English muffins, split and cut in half vertically
  • 2 slice Canadian bacon or pre-cooked smoked bacon or 1 slice ham,
  • cut in half
  • 2 slice cheese

Pour half the egg into each cooking well. Cook 2 minutes.
Meanwhile, put cheese and bacon or ham on one half of each
English muffin. Remove egg and place over cheese and bacon or
ham. Put on the other half of each English muffin. Put one muffin in
each well. Cook about 2 minutes until cheese is melted and muffin is
toasty. Serves 2.

GT Xpress 101 Breakfast Hash
  • 1 cup frozen, shredded hash brown potatoes, thawed
  • 1/4 teaspoon garlic powder
  • 2 Tablespoons chopped onions
  • 1/2 cup shredded cheddar cheese
  • 2 fully-cooked breakfast sausage links, chopped
  • 3 eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Combine all ingredients. Spoon 1/2 of the mixture into each well of the xpress cooker.
Cook 10 minutes or until well browned. Serves 2.Vegetarian Breakfast Hash – substitute 2 Tablespoons chopped
broccoli or well-drained chopped spinach, 1 chopped mushroom and
3 chopped grape tomatoes for the sausage.
Breakfast Bagel Recipe
  • 2 eggs
    1 small or 1/2 large bagel, split and sliced in half
  • 2 slices Canadian Bacon
  • 1 slice American cheese
    Fit the bottom half of each bagel into well. Carefully crack an egg
    onto each bagel. Top each with half the cheese and half Canadian
    bacon and the top of the bagel.
    Cook 8 to10 minutes. Serves 2.

Scrambled Breakfast Bagel Nosh – substitute 2 beaten eggs for
whole eggs.
